We've recently opened the doors of our brand new restaurant and bar, Cyan, where we celebrate the art of shared dining and interactive cooking experiences.

Everything at Cyan is carefully crafted with sustainability and seasonality in mind - from our changing selection of tempting small plates and platters to our recycled and re-imagined design features. With Cyan, we have brought something unexpected to The Grand and something unique to the dining scene in Brighton.


Our doors are open from 11am-10pm every day and we serve our seasonal menu of small plates, sharing dishes, and platters from midday until close.

Throughout the day, Cyan is the perfect spot for a leisurely lunch or a coffee and a catch up. We've got complimentary speedy wi-fi and USB chargers around our gorgeous circular bar. Remote working has never looked so beautiful!


Our team are passionate about creating exceptional dining and drinking experiences, whether it's cocktails with perfectly paired nibbles on a Friday night or a special occasion dinner overlooking Brighton's seafront.  

 Watch our chefs cooking up a storm behind the bar and slicing amazing Sussex charcuterie with our old school meat slicer. Chat with our talented bartenders about their seasonal concoctions and some of our unique, homemade ingredients. Ask your waiter about our locally sourced produce and some of their recommended pairings. 


Our seasonal all day dining menu is inspired by culture, heritage and travel. Our chefs blend locally sourced produce with a handpicked selection of unique and high quality ingredients from around the world to design new and unexpected combinations.

On Sundays between midday and 3pm we serve up incredible roasts with super-sized yorkshires and heaps of roasted seasonal veg to share. It's just £18 for a roast and your choice of pudding, including treacle tart, sticky toffee pudding, vegan pineapple tatin, and our Sussex cheese board.
