Local recycling heroes Weez & Merl recycle waste plastic. They melt and marble it, highlighting the beauty of this undervalued material. They have recycled our coasters and several pieces for the restaurant using gorgeous greens and blues.

We receive two shipments of fish a day from Brighton & Newhaven Fish, to give guests the freshest taste from the sea. They’re committed to sustainable fishing practices and only share with us the fish that are in season and responsibly sourced.
